1. Zucchini Buddy Boats

Ingredients

  • 2 medium zucchini
  • 1 small onion, finely chopped
  • 1 small tomato or 2 tablespoons ketchup
  • ½ cup boiled corn or peas
  • ½ cup grated cheese (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon oil or butter

Instructions

  1. Cut zucchini lengthwise and scoop out a shallow centre.
  2. Chop the scooped zucchini pulp and keep it aside.
  3. Mix onion, tomato or ketchup, corn or peas, chopped zucchini pulp, salt, pepper, and oil or butter in a bowl.
  4. Fill the zucchini halves with the prepared mixture.
  5. Add grated cheese on top if using.
  6. Bake at 180°C for 15–20 minutes until zucchini becomes soft and topping is lightly golden.
  7. If oven is not available, cook covered on a low flame in a pan until tender.

Serve warm.

2. Cute Co-op Express!

3. Veggie Weight Mystery: Can You Solve It?

4. Mission: Co-op Vault

Act I
