Bring together buttery mushrooms, garlic, cumin, chilli, chaat masala and fresh coriander for a quick, flavourful topping for crisp bread. The recipe also gives you a small opportunity to think like a food scientist: observe how heat changes the ingredients and predict what the finishing butter will do.

Air Fryer Masala Mushroom Crostini

Cook Time: 8–10 minutes

Temperature: 180°C (350°F)

Ingredients

  • Mushrooms: 2 cups chopped mushrooms (button, oyster, or shiitake)
  • Butter or Ghee: 2 tablespoons (1 tbsp melted, 1 tbsp soft/chilled)
  • Garlic: 1 tablespoon minced
  • Spices: ½ tsp cumin powder, ½ tsp red chili flakes/powder, ½ tsp chaat masala, salt & black pepper to taste
  • Herbs: 2 tablespoons fresh coriander, finely chopped
  • Bread: 6–8 slices of baguette, pav, or toast

Step-by-Step Directions

  1. Season: In a bowl, toss the chopped mushrooms with 1 tbsp melted butter, garlic, cumin powder, red chili, a pinch of salt, and pepper.
  2. Air Fry: Spread the mushrooms in a single layer in your air fryer basket. Air fry at 180°C (350°F) for 8–10 minutes (shake the basket at the 5-minute mark so they cook evenly).
  3. Finish & Glaze: Transfer the hot mushrooms straight into a bowl. Immediately mix in the remaining 1 tbsp butter, chaat masala, and fresh coriander. Stir well until the butter melts into a rich, flavourful glaze.
  4. Serve: Toast your bread slices directly in the air fryer or oven at 200°C (400°F) for 2 minutes until crisp, spoon the warm mushroom mix on top, and enjoy!

Materials

  • A bowl
  • ½ cup of milk
  • Dish soap
  • Cotton swab
  • Food Coloring, more than one color
  • Pepper (optional)

Instructions

  1. Pour the milk into the bowl. Be careful not to move the bowl, you want the milk as still as possible.
  2. Put one drop of each color in different places in the milk.
  3. Put just a tiny amount of soap on the end of the cotton swab, then touch it to one of the colors. WOW!
  4. Let the experimenting begin!
  5. To clean up, just pour the milk down the drain. (Do not drink it)
Important: This milk is being used for an experiment. Do not drink it after adding food coloring and dish soap. Wash hands and clean the work area after the activity.

How it Works

Milk contains water, fats and proteins. When food colouring is placed on the surface, it initially stays concentrated in small areas. Dish soap interacts with the fats and proteins at the milk's surface and changes the surface-tension balance. As the soap spreads and interacts with the milk, the liquid moves and carries the food colouring with it, creating the dramatic swirling effect.

Think a little deeper: The dramatic movement you see is associated with interactions between dish soap, fats and the surface of the milk. The experiment is especially useful because you can observe the effect first and then ask what caused it. That makes it a simple introduction to prediction, observation and evidence-based explanation.
