"The act of gathering around a flame remains the central tenet of the harvest season," a local chef stated. They explained that transitioning from a traditional bonfire to a structured barbecue allows for a more controlled experience.

Tandoori pineapple skewers

Ingredients

  • One fresh pineapple, wedged
  • 200g Greek yoghurt
  • 2 tbsp tandoori masala
  • 1 tbsp honey
  • Chaat masala & fresh mint

Instructions

  1. Whisk yoghurt, tandoori masala, and honey.
  2. Coat pineapple in marinade for 30 minutes.
  3. Thread onto skewers and grill over high heat.
  4. Char for 8 minutes, turning frequently.
  5. Season with chaat masala and mint.
